What's even better is that you can make this simple, yet flavoursome salad in your very own kitchen - and you wouldn't believe that it's both vegan and gluten free.

Warm Crispy Lentil & Winter Vegetable Salad


We used a Plant-based Love Box from Earthy Eats containing:

  • Garlic
  • Onion
  • Cauliflower
  • Baby beets
  • Dutch cream potato
  • Sweet potato
  • Avocado
  • Coriander
  • Brocollini
  • Green beans
  • Lettuce mix
  • Seasonal fruit

Serves 4.

  1. Preheat oven to 180 degrees.
  2. Chop chosen vegetables into bite sized pieces, toss with olive oil, salt and pepper, and place in middle rack of oven.
  3. Toss 2-3 cups of well drained, cooked brown lentils with olive oil, season with salt and pepper, spread evenly on baking tray and place in oven with vegetables.
  4. Cook veggies and lentils for around 40 minutes, tossing both every 10 minutes until cooked evenly.
  5. Meanwhile, place 1/6 cup coriander, a handful of baby spinach, 1/3 cup parmesan, 1/3 cup olive oil, 1/4 cup of pine nuts and 1 large garlic clove in blender or food processor, blitz until combined and season with salt & pepper to taste.
  6. Fry slices of halloumi until golden brown.
  7. Place veggies, lentils and a couple of handfuls of baby spinach in a large bowl and toss with your preferred vinaigrette.
  8. Divide amongst bowls, top with halloumi and spoon over pesto - enjoy!
