Turkish Red Lentil and Vegetable Soup
Inspired by the traditional Southern Anatolian dish 'Enzos Bride Soup', it is perfect for lunch, dinner or on the walk home after a night out. Our version starts by sweating winter vegetables in olive oil and warming spices, before cooking through red lentils and a specialty vegetable broth. The soup is garnished with minted yogurt and burnt pepper butter (or leave off for a vegan version) and served with toasted turkish pide. Hearty, but still fresh on the palette.
